Creamy-white in colour with a flexible texture, uniform air bubbles, marbling that ranges from blue to green and a naturally dry rind (indicating a successful maturing process), Fourme d'Ambert has a very rustic and fragrant flavour. The raw milk that is used to make our Fourme d'Ambert with AOP raw milk comes from meadows at an altitude above 500m, consisting mainly of volcanic plateaus interspersed with steep-sided valleys.
