Comté (or French Gruyere) is a French cheese made from unpasteurized cow's milk in the Franche-comté province of eastern France. Comté has the highest production of all French AOC cheeses. This 12 months is slightly older than the 6 to 8 months, more yellowish and flavorful but less salty then the 24 months. Still got a touch of creamy and nutty palate.
