Wine Pairing:

Option 1: Cote Rotie, E.Guigal Brune et Blonde 2004, a Northern Rhone, with grapes varieties of Grenache & Syrah, gives a light cherry and smoky aroma with light touch of leathery palate. Not overwhelming as this label reaches its perfect timing and well pair with the aged cheeses and the medium light bodied wine.

Option 2: Château de Fargues, 2002, small boutique sweet wine from the same region of Château d'Yquem in Sauternes, Bordeaux, France. Light gold, honeysuckle and hint of peach palette, perfect for the Epoisses. 

Some hard cheese will be diced for easy consumption. All cheeses are subject to availability. 

**Epoisses shelf life normally can keep even after best consume date. The more the matured the more the intense and pungent flavor it will be. Hard cheese shelf-life can be up to months  and in fact the more the aged of these type of cheese the better it is and are subject to storage conditions after delivery.
