This page dedicated to cheese lovers who are particularly keen to savor aged cheeses. Aged cheeses means cheeses are usually hardly than the young one, when cheeses are aged, they will lose moisture. Hence the palates are more flavorful, intense and sharp.
Majority of the hard cheeses are aged minimum 18 months old, the older of theses cheeses, the more firmer they are, and have either crumbly or sometimes even crystalline texture.
