Brie is made from raw soft cow's-milk and named after Brie, the French region Seine-et-Marne. During the ripening process its white rind turns brown and develops small red spots. Very aromatic, rich and smooth. One distinguishing feature of Brie is its strong terroir fragrance, paired with a very fruity flavour, a pronounced bouquet and a subtle hazelnut note.
