Wine Pairing: Recommend to pair with premium half bottle of sweet wine Chateau Rieussec 2001, 1er Cru from Sauternes, France. This beautiful sauvignon blanc semillon nectar shares the same plot of vintage of Chateau d'Yquem, and the humble label value is less than half of the Yquem. Palate: mandarin, peach and pineapple, sweet with good finishing and great pairing with all the recommended vintage hard cheeses and of course the signature Epoisses, best marriage together! Vintage 2001 is one of the finest year in Bordeaux sweet wine. Scoring average 95 pointers.

**Epoisses shelf life normally can keep even after best consume date. The more the matured the more the intense and pungent flavor it will be. Hard cheese shelf-life up to months (subject to storage conditions) and in fact the more the aged of these type of cheese the better it is and are subject to storage conditions after delivery.
