This is an uncooked pressed cheese made with cow's milk, with a grey, spotted and bloomy rind, ripened for at least 1 month on spruce boards in a natural cellar. The texture is moist and the taste is balanced and slightly salty. This cheese is relatively low fat content is ranged from 25% to 45%. The brownish rind with a grassy palate of hay and herb flavor.
Wine Pairing: a light to medium red is recommended: Chateau Sociando Mallet 1996 with blend of Cabernet Sauvignon and Merlot, which just reached to the maturity.
