Premium mimolette aged minimum 28 months, hard Cheese from the north of France, coloured with annatto with natural rind with mites. Every Mimolette is individually wrapped to keep the mites from spreading to other cheeses. It was created in the XVII Century as a native French alternative to the then very popular Edam. With an aged mimolette, the texture tasted very yolky and more to crystal salt content, perfect pairing with aged whisky. We have pre-cutted the aged mimolette with our professional cheese knife, due to the texture is extremely dense and hard, it requires skillful cheese knife to carve to chunky shaved.

Wine Pairing: Cote Rotie, Tardieu Laurent 2001 / 2004, medium strength Rhone Valley red with grenache and syrah based grapes varieties. Or any vintaged Champagnes are ideal, too
